I'm often asked how far I cycle in a day, and It's a question I don't really like to get into. For one thing it's not that meaningful- 100km on even roads is far easier than 50 on dirt tracks over hills. I also try to steer away from the inclination to make everything quantitative and competitive - I'm on holiday, not doing an iron man competition.

All that said, I've discussed this with other bikepackers, and the consensus is about 80km a day over average terrain (some hills, no mountains, maybe a bit of headwind or dirt road). 60 doesn't satisfy and 100 gets laborious. I reckon on doing about 15kph, so that means if I leave around 9 I'll get where I'm going about 3 with enough time to relax and take a shower, and enough energy to explore the town's museum/church/old town and enjoy a hot meal and a cold beer.
